Unique Coconut-Papaya Dessert

This healthy and delicious dessert is perfect for cooling down on a hot summer's day. It is also good for bringing some charm into your winter meal -- the elegant coconut-topped papaya pieces look like snow-peaked mountains. The light sweetness of the coconut milk complements the taste of the papaya beautifully, making it a great dessert for those looking to satisfy their sweet tooth with a healthy dessert with no added sugar. Best of all, it has only three ingredients!


Coconut-Papaya Dessert

Cook time:

Ingredients:
1 papaya
1/2 can (about 200 mL) coconut milk
1 t agar-agar powder 
(optional) unsweetened coconut flakes  

Directions:  
1. Peel and cut the papaya. You can do this either width-wise (preferred) or lengthwise. I do it lengthwise here, but have since found that the other method is actually easier. 
2. Now, that the papaya is cut, use a spoon to scoop out all the seeds. Try to keep the insides scooped as smoothly and cleanly as possible. 



3. Once the papaya is prepared, heat the coconut milk with the agar-agar on the stove until it begins to lightly boil. Agar-agar powder is made from seaweed, and thus is a great source of protein that is appropriate for those who are gluten-free or vegan. It acts like gelatin, but needs to be brought to a boil in order to set.  Once it sets, it will remain jelly-like at room temperature.




4. Pour the coconut milk mixture into the cavity of the papaya. Refrigerate until set. 



5. Cut into triangles and serve. Sprinkle with coconut flakes if desired.
